About the restaurant
Gaegeum Milmyeon is widely regarded as one of the originators of milmyeon — Busan's unique cold wheat noodle dish invented by Korean War refugees who substituted buckwheat (unavailable) with wheat flour. The chewy wheat noodles are served in two styles: mul milmyeon (in a cold, refreshing meat broth) or bibim milmyeon (with a sweet-spicy red pepper sauce). The broth is made fresh daily from pork bones and vegetables and has a clean, slightly effervescent taste. Toppings include mustard greens, boiled egg, and thin slices of pork. A true taste of Busan culinary history — inexpensive and deeply satisfying, especially in summer.
