Gijang Myeolchi Ssambap is a Gijang specialty that takes the Korean ssam (wrap) concept to the next level by substituting the usual pork with raw fresh anchovies (myeolchi). Gijang's fishing boats pull in anchovies that are uniquely large, fatty, and non-fishy due to the clean East Sea current — making them exceptional eaten raw. The experience: wrap a spoonful of rice, a small fillet of fresh anchovy, doenjang paste, and a sliver of garlic into a leafy perilla or lettuce leaf and eat in one bite.
